How do you proceed?

Boil the peeled potatoes in salted water for 15-20 minutes, or until the fork easily penetrates them, drain and leave to cool.

Boil the eggs. Put them to boil in cold water and time 5 minutes from when the water starts to boil. Take them off the heat, leave them for another minute in boiling water, then cool them under a stream of cold water.

After they have cooled to an acceptable temperature, peel the potatoes and eggs. Slice the potatoes into round slices and the eggs into longitudinal slices (ie π wide and π long, respectively). The washers should not be thicker than 5 - 6 mm.

Cut most of the bacon into cubes about 5 mm on the side. Keep 6 sliced, which you cut into two symmetrical halves (ie both to have fifty-fifty and meat and bacon).

Take a large tray (7 × 11 inches or 18 × 28 cm) with high walls (2 inches, 5 cm), grease the bottom with oil.
