Bagel ingredients

Bagel making:

Step 1: prepare the dough.

Pour the required amount of clean distilled water into the stewpan, put it on a stove included in the middle level, and heat the liquid to 30 degrees. Water should be warm, but not hot! Pour warm water into a deep bowl and pour in the wrong amount of dry yeast. Place the bowl in a warm place, such as near a turned-on stove, and let them rise for 20-30 minutes the dough should foam. In the second deep bowl, mix the right amount of sifted wheat flour, salt and sugar. Stir the dry mass with a tablespoon until smooth. In the small bowl, beat the right amount of unshell eggs and add vegetable oil to them, then whisk the mass with a whisk until lush foam over 3 to 4 minutes and enter into it the rising dough. Stir the liquid mass with a tablespoon and partly add the dry mass into it from the second deep bowl. Knead the dough, form a bowl out of it, and leave it in a bowl covered with a kitchen towel. Place the bowl of dough in a warm place on 40 - 45 minutes in order to insist. Then knead it on the kitchen table in a small amount of sifted wheat flour until the dough becomes elastic. After divide it into 12 equal parts, using a spatula or knife. Preheat the oven up to 180 - 190 degrees Celsius.

Step 2: form and insist bagels.

Roll a ball from each part of the dough and place them on a baking sheet covered with baking paper. The distance between the balls of dough should be at least 10 - 15 centimeters, therefore, to prepare 12 bagels, you will need 2 non-stick baking sheets and 2 sheets of baking paper. Place the baking sheets with bagels in a warm place so that the dough rises. In 15 - 20 minutes take a piece of lush dough in your hands and very carefully with your fingers make a hole in the middle of the ball, then form a bagel and place it back on a baking sheet. In the same way, give shape to all other bagels. Place the baking sheets in a warm place again and let the dough rise, for 10 to 15 minutes.

Step 3: prepare the sprinkle.

Using a knife, peel the onion, rinse it under running water, dry it with paper kitchen towels, lay it on a cutting board and cut it into an average cube with an approximate diameter of 1 to 1 centimeter. Then put the onion cubes on a baking sheet pre-coated with food-grade aluminum foil and place it in the oven for 5 to 10 minutes. The onion should be baked and covered with a golden crust. If your onions turn out to be very overdried, do not worry, you can also use it most importantly, so that instead of onions you have no coals. Simultaneously with cooking the onions, turn the stove on a medium level and place a deep pan on it, half full with ordinary running water. When the onion reaches the desired consistency, remove the baking sheet, helping yourself with a kitchen towel from the oven, collect the onion cubes with a tablespoon and place them in a deep bowl. Add dried garlic, poppy seeds, sesame seeds, salt and ground black pepper there. Stir the mixture with a tablespoon until smooth. Combine the sifted wheat flour with breadcrumbs in a separate bowl and sprinkle the non-stick baking sheets with the resulting mixture, after removing parchment paper from them.

Step 4: scald the bagels.

While you were preparing the onions, your bagels became lush and increased in size by about 1-1.5 times, and the water in the pan began to boil. Add salt to taste to it and very carefully dip 2 - 3 rolls into it, you should not lower a larger amount, otherwise it will be inconvenient for you to pull them out of boiling water. Cook bagels 20 - 30 seconds, then use a slotted spoon to pull them out of the water and place them on a baking sheet sprinkled with flour and breadcrumbs. Scald all other bagels in the same way. Drive a chicken egg into a deep plate and beat it with a whisk until lush foam, using a baking brush, grease the bagels with the resulting mass and sprinkle them with powder, helping yourself with a teaspoon. Sprinkle the rolls in an even layer, preferably on all sides.

Step 5: bake the bagels.

Send baking sheets with bagels to the oven for 20 to 25 minutes. During this time, they will reach full readiness and will be covered with a beautiful golden crust. After the required time has elapsed, open the oven and remove the baking trays from it, holding them with a kitchen towel. Place the baking sheets on the kitchen table and use the kitchen spatula to place the finished bagels on the wire rack. Let the rolls cool to room temperature, as you know hot dough is very harmful to the stomach. And now an important moment has come, now put the bagel on a plate and enjoy this simple, fragrant and very tasty pastry.

Step 6: serve the bagel.
