Biscuits filled with chocolate

Heat the whipped cream, add the chocolate cut into small cubes and mix until it melts. After the chocolate cream has been homogenized, put it in the fridge and let it cool until it hardens. If the cream stays in the fridge for 3-4 hours, it will be easier for us to fill the biscuits with it.

For the dough, the butter must be soft. Mix the butter with the powdered sugar until you get a frothy composition. Add the egg yolk and continue mixing. At the end add the vanilla sugar, 400 g of flour and knead. We gradually add the remaining 200 g of flour depending on how much flour we need. The dough must be soft but non-sticky, if necessary we can add more flour until we bring it to the right consistency. Wrap the dough with plastic wrap and put it in the fridge for 30 minutes.

After taking the dough out of the fridge, making balls, digging them out with your fingers and putting a teaspoon of chocolate in each hole obtained. Glue the edges and close the balls well so that the chocolate does not run when we put the biscuits in the oven. Here I hurried a little and I didn't have the patience to fold them properly, that's why some biscuits ran a little out of the chocolate.

Place the biscuits on a tray lined with baking paper and place the tray in the oven heated to 180 degrees C. The biscuits will be ready in about 20 minutes. But it is good to check them, when they become pink underneath you can take them out of the oven.

They are powdered with powdered sugar and are ready to be eaten.

Prepare the chocolate mousse like this

mix the whipped cream with the sugar in a saucepan and place it on the stove. Bring the whipped cream to the boil and turn off the heat. Add dark chocolate and cocoa and mix everything to obtain a homogeneous composition. Allow the composition to cool, then mix it with cream cheese.
Remove the tray from the refrigerator and pour the chocolate mixture. Level well and shape again in the fridge for 3 hours or preferably overnight. Remove the adjustable ring, first carefully passing a knife to detach it from the cake. Decorate with melted chocolate, according to your imagination.
